Gyokuro Isshin Shade-Grown Green Tea
Shade-Grown Green Tea
Shade Grown Green Tea — or Gyokuro, which means “jade dew”— is known as one of Japan’s finest teas. This Gyokuro shade-grown green tea is an Asatsuyu Gyokuro that has a mellow and unique umami taste. Even in Japan, this variety of green tea is considered rare.
High Caffeine
Gyokuro green tea is grown in the shade for 21 days before harvest. This process produces a jade colored tea that is sweeter, less astringent, and abundant in antioxidants and nutrients. Shade-grown green tea is especially high in natural caffeine, which may cause white amino acid crystallization to form.
Gyokuro Furikake Recipe
Repurpose your used Gyokuro tea leaves by making a furikake, which can be enjoyed by sprinkling over rice. Dry the tea leaves by using a microwave to evaporate the water, then crush them up into small pieces. Dry-roast the crushed leaves in a frying pan and add salt and other ingredients such as sesame seeds, dried shrimp/fish depending on your preference.
How To Prepare Kooridashi Ice-Brewed Gyokuro
Step 1 Put 10g of Gyokuro tea leaves in a kyusu or teapot (with a capacity of 500-700ml) without a tea strainer and spread thinly for easy extraction.
*Using a tea strainer is not recommended, as the extracted tea may get lukewarm over time at room temperature. If you would like to use a tea strainer, we would encourage you to leave the ice to melt in the fridge overnight.
Step 2 Put 50g of ice directly on top of the tea leaves. We recommend using ice made from filtered water or mineral water for a more delicious flavor.
Step 3 Leave the teapot at room temperature for 4 to 5 hours or leave it in the fridge overnight. After the ice melts (it’s okay if the ice is not completely melted), shake it gently to even out the tea extract. Pour into cup(s). Enjoy the beautiful green color and wonderful umami flavor!
How To Prepare Hot Gyokuro Shade-Grown Green Tea
Step 1 Boil fresh water and pour into a yuzamashi (water cooler) or cup(s) to adjust the water temperature. Recommended water temperature for Gyokuro is 122°F (50°C)-140°F (60°C). Try different brew times and temperatures to find your preference.
(Tip: Simply pouring hot water into a small tea cup will reduce its temperature by 10°C / 20°F)
Step 2 Add one teaspoon of gyokuro into your teapot/kyusu to brew 8oz (1 cup) of tea.
Step 3 Pour the water into the teapot/kyusu and steep for 2 minutes. Gyokuro can be resteeped 3 times. Enjoy.
*Gyokuro is a delicate tea. Brewing at low temperatures will avoid any bitterness and enhance the sweet taste.
