Pesto Egg Breakfast Sandwich with Turkey Bacon & Aged Cheddar

  • 2 slices turkey bacon, no nitrates or nitrites
  • ½ tbsp pesto
  • 1 large egg
  • ¼ tsp paprika
  • sea salt and ground black pepper, to taste
  • 1 whole-grain English muffin, split (or 2 slices whole-grain bread, toasted)
  • organic unsalted butter, as needed
  • 1 slice aged cheddar cheese
  • ¼ cup mixed greens
  • avocado slices and sriracha, optional

  1. Mist a medium skillet with cooking spray and heat on medium. Cook bacon to desired crispness. Transfer to a plate.
  2. To skillet, add pesto and heat through. Add egg and season with paprika, salt and pepper. Cook to desired doneness, either over easy or sunny-side up.
  3. Butter toast or English muffin. Sandwich with pesto egg, turkey bacon, cheese, mixed greens and avocado and sriracha (if using).
