What is the difference between cinnamon and real cinnamon?

What some of us don’t know is that cinnamon is most commonly found in two forms – Ceylon cinnamon and Cassia cinnamon. And to be exact, most of the times you’ll find the Cassia version in the market and cassia cinnamon is commonly known as cinnamon.

Ceylon cinnamon has a lighter color and smoother texture. Its taste is more delicate and slightly sweeter than Cassia cinnamon. Ceylon cinnamon sticks tend to be softer and crumblier than their Cassia counterparts. Did you know that Ceylon cinnamon is often referred to as the “true cinnamon” or “real cinnamon”? Ceylon cinnamon is primarily produced in Sri Lanka. Whereas the Cassia cinnamon is usually a mixture of many different types of cinnamon.

One of the biggest differences that Cassia and Ceylon cinnamons have, is that Ceylon cinnamon contains a lot less coumarin (less than 0.004%) compare to cassia. And this is a good thing! Coumarin is a natural compound found in cinnamon. BUT! health specialists believe, Consuming coumarin in large quantities is toxic to your liver and kidneys. It may even lead to liver damage or failure. So if you’re trying get healthier while consuming cinnamon, make sure it is safe and doesn’t have the opposite effect on your health!

WHAT ARE THE PHYSICAL DIFFERENCES: 1) Cassia cinnamon has a strong spicy flavor compared to Ceylon cinnamon, which has a very mild flavor. 2) Cassia is very tough to break but Ceylon cinnamon can be easily broken. 3) Ceylon cinnamon is light brown in color while cassia is dark, reddish brown. 4) Cassia forms only few layers while Ceylon cinnamon creates multiple layers. CEYLON CINNAMON HAS A LOWER COUMARIN RATE COMPARED TO CASSIA: Ceylon has less than 0.004%, while cassia has around 1%. Medical researchers believe high amounts of coumarin consumption can cause health risks.
WHY SWEETNESS AND FLAVOR VARY IN CEYLON CINNAMON: Due to the soil and weather condition of the environment, the flavor and sweetness of Ceylon cinnamon can vary from place to place within Sri Lanka. Even though sourcing only the high sweet and flavorful Ceylon cinnamon is a challenge, we use our expertise to source Ceylon cinnamon from a selected farms primarily located in the central part of the country. But even then, the flavor of Ceylon cinnamon can still be vary.
BEST WAY OF GETTING AROMA: We recommend grinding Ceylon cinnamon before using it in a recipe for best results of flavor and aroma.
