When choosing an extract, it is important to recognize the differences between pure, natural, premium, and WONF product types. Pure extracts derive their flavor and aroma only from the real plant source. As an example, a pure rose extract only uses the rose flowers to derive its rose aroma profile. Natural extracts use natural sources to bring about a particular flavor and aroma. This means a combination of generally less costly or more abundant natural sources are used to design a product that mimics the intended flavor and or aroma. A WONF product is made from a combination of natural and synthetic compounds to engineer the desired smell and taste. Premium extract is just a way of promoting a product and shares nothing about the actual aroma sources (i.e. it could be a WONF or imitation). Emulsions are water based solutions and use synthetic compounds that try to imitate a particular flavor. If the product label or description doesn’t tell you about the flavor/aroma source there is a high likelihood the flavor source is synthetic, imitation or substitute compounds.
The best way to smell an extract is to let a drop or two dry on a strip of paper. Very much like a perfume. To taste, try a few drops in coffee, ice cream, tea, or whipped cream. Do not taste directly.
