Recipe for Cranberry Clafoutis

Pour mix into a buttered 9 inch spring form pan, or a 9 inch round pan lined with parchment paper, and evenly distribute cranberries on top (they will sink into the mix a bit). Place in oven for approx. 20 minutes, baking until edges are slightly golden and center is still soft. When you check the center, your knife will probably not come out clean, but that’s ok! Better slightly undercooked than over. Let cool 30 minutes and use this time to heat leftover water in saucepan with 1⁄4 cup brown sugar and 2 TBS apple cider vinegar. Bring to a boil, reduce heat and let simmer until a syrup like consistency is reached. Remove from heat and cool (20 minutes). Once cake and syrup have fully cooled, drizzle syrup on cake and serve!

Preheat oven to 350F
2 cups of cranberries
6 tbs Vermont Village Apple Cider Vinegar with Cranberries & Honey
1/4 cup water
1⁄4 cup honey
2 cups almond flour
1⁄2 tsp salt
6 eggs
1⁄2 cup maple syrup
1⁄2 cup brown sugar
butter or parchment paper for the pan
Directions
Place cranberries in a saucepan with water, honey and 4 TBS apple cider vinegar. Cook until soft then strain cranberries, leaving the cooking water in saucepan for later. Next, in a large bowl mix almond flour and salt, and in a separate bowl whisk 6 eggs and maple syrup. Pour wet mix (except for the water) into dry mix and stir until all ingredients are fully incorporated.
